Recommended wallets, but no private keys?

Hey, I've got a question, there is something I just don't understand.

I'm still new to crypto, started reading about it yesterday.

1) Literally every guide says that this is important to own the private keys to a wallet, because only then it can be said that you posses the bitcoins. This part I understand. However I don't understand why recommended wallets, such as Samourai and Electrum won't show them to me. It goes against everything I've read so far. Or am I just blind and there is an option to see them? So far I only have those 20-something chain of words.

2) Guides say that for storing larger numbers of crypto, it's good to have an offline wallet generated for example with Electrum. How would that work? I mean what would happen if my offline computer generated a wallet with the same seed as someone's else offline computer? Isn't this a possibility?
